quest for a "healthy" cookie 15 May 09 - 21:02
|
i've been searching and experimenting with "healthy" cookie recipes. i found a base recipe that sounded promising and after a few batches and playing around with ingredients, proportions, baking time, etc, this is the result. i am very pleased with them. the cookies are
not very sweet, so if you make them don't expect a rich, decadent dessert. i think they make a perfect mid-day snack. i like to freeze them and eat 'em frozen – mmm.

1/2 tsp baking soda

1 Tbsp cinnamon
1/2 tsp nutmeg
2 Tbsp ground flax seed
In a medium bowl, mix:
1/4 cup brown sugar
1/4 cup honey
2 Tbsp. canola oil
1/2 cup chunky applesauce
1 ripe banana, mashed
1 Tbsp. molasses
2 tsp. vanilla
Combine wet & dry ingredients.
Add:
1/4–1/2 cup raisins, dried cranberries, or other dried fruits
1/4–1/2 cup chopped almonds or other nuts
1/4–1/2 cup chopped dark chocolate or semi-sweet chocolate chips
*Note: You can add whatever sounds yummy in whatever quantities. I usually just throw stuff in until it looks like good mix-in to cookie dough proportions, which is why the above quantities are approx.
Put dough in 'frig for 20 minutes to cool.
Drop by Tablespoon-fulls onto lightly oiled baking sheet.
Bake at 350-degrees for 12–14 minutes.
Makes 48 cookies, depending on how big you make them. I tend to make mine on the small side, and they calculate to about 50 calories, 1.5 grams of fat, 4.5 grams of sugar, 1 gram of protein per cookie (of course this changes slightly depending on your mix-ins).
